Beet salad is a kind of food that is not only tasty and aromatic, but also extremely healthy, which works like a real medicine.

The substance that gives the beet its blood-red color is called betalain, and its presence, quite sensitive to boiling and extremely sensitive to baking, is responsible for all the antitumor and antioxidant properties of this vegetable.

As such, the beet will not be eaten ripe, but only boiled, and not anyway, but only in the skin, and only until it softens (check by poking it with a fork).

No more! After boiling, grate the beetroot, add 1-3 grated horseradish roots, then salt, oil and apple cider vinegar to taste. Add a little honey, then mix the ingredients very well and put them in a hermetically sealed jar with a lid.

Beet salad can be stored in the refrigerator, without problems, for two weeks, during which time it will preserve its therapeutic properties.

It is an excellent remedy against colds, bronchitis, kidney-urinary diseases. During the holidays, beetroot salad with horseradish is indispensable on the table of many Romanians, because it increases digestion capacity and prevents all kinds of digestive disorders, such as gastritis, dyspepsia or bloating.
